Karathe Talasan ( Bitter Gourd Garlic Stir Fry )



Healthy, tasty super yum dish which really goes yummy with bowl of curd rice !! Give a try & I bet you will love this :)

Ingredients :

  • Bitter Gourd 1
  • Broken red chillies 2-3
  • Crushed garlic 4-5
  • Tamarind pulp 2 tbsp
  • Powdered jaggery 1 tsp
  • Oil 2 tbsp
  • Salt to taste.
Method :
  • Chop bittergourd & soak it in salt water 30 minutes.
  • Squeeze out the water & keep aside
  • In kadai, I used cast iron kadai which gives unique taste, add oil once its hot add crushed garlic fry it till its brown, add broken red chillies.
  • Now add bittergourd & fry it for few minutes.
  • Add tamarind pulp, jaggery salt & water.
  • Cook it covered until its done.
Serve hot !!!

Bhenda Upkari ( Ladies Finger Stir Fry )




  Ingredients :

  Ladies finger ( Tender ones ) -20 to 25

  Seasoning items :

Oil 2-3 tsp
 Mustard seeds 1 tsp
 Urdal  -1/2 tsp
Chopped green chilles 2-3

Salt to taste.

Grated coconut to garnish. ( Optional )

Method :

Wash & clean ladies finger, & pat them dry

Chop them into 1" inch pieces.

In a kadai  heat oil& season it with  seasoning items.

Now add chopped  ladies finger, & salt.

Cook it uncovered in low flame, until done, stir it in between to avoid it from burning.

Garnish with grated coconut.


Serve hot with rice or roti !!


Note :

 Cook it uncovered until its done.

 Donot add any water for this stir fry, which will make stir fry tasty & non sticky :).

Beans Carrot Upakri ( Beans Carrot Stir Fry )




Ingredients :

Chopped french beans - 1 cup
Carrot 1/4 cup
Salt for taste

Seasoning

Oil 2 tsp
Mustard Seeds   1 tsp
Urdal 1/2 tsp
Green chilles 2-3

Grated coconut  1 tbsp ( optional )

Method :

Heat oil, season it with seasoning items.

Now add chopped carrot &beans, add salt, little water & cook it covered until done.

Garnish with grated coconut.

Best combo with rice & rasam!!!

Note: You can season it with crushed garlic also, in that case skip musturd, urdal & grated coconut !!!

Poddale Upkari ( Snake Gourd Stir fry )




Ingredients 

Poddle ( Snake Gourd ) -2
Salt for taste.

Seasoning :

Oil 2 tsp
Mustard seeds 1 tsp
Urdal - 1/4 tsp
Chopped green chilles 2-3

jaggery - 1 tsp ( optonal )
Grated coconut -1 tbsp ( optional)

Method :

Peel off the thin layer of snake gourd, and discard the seeds and cut into small cubes, wash them & strain it.

In a kadai heat oil & season it with seasoning items, now add chopped snake gourd, salt, jaggery & little water, cook it covered until done.

Garnish with grated coconut

Gobi Stir Fry




Ingredients 


  • Gobi florets 1 cup
  • Potato chopped in cubes 1
  • Tomato chopped in small pieces 1
  • Red chilli powder 2 tsp
  • Asafoetida  1 tsp
  • Oil
  • Mustard seeds 1 tsp
  • Water 2 cups ( To boil the florets)
  • Haldi powder - pinch . 
      Method  :



      •    Clean the florets & keep it aside
      •   Boil about two cups of water to this add pinch of haldi & salt now cook florets in hot water for about 5 minutes ( Dont over cook it )Keep it aside
      • Now in kadai add heat oil season it with musturd, asafoetida, & red chilli powder fry it for a minute.
      • Now add chopped potato, cooked florets, tomato, salt and little water and cook it covered for 2-3 minutes !!!!
      Relish wit hot rice ghee & dal :)

      Alsande Upakri ( Long Beans Stir Fry )





      Ingredients :

      Chopped long beans 1 cup
      Salt for taste 

      Seasoning items 

      Oil
      Mustard seeds
      Urdal
      Red chillies 2-3

      Garnishing

      Grated coconut 

      Method :

      In pan do the seasoning with seasoning items.

      Now add chopped long beans, salt, water & cook it covered until done

      Garnish with grated coconut.

      Serve hot with rice or roti :)

      Tendle Talasani ( Crushed Gherkins Garlic Stir Fry )





      Tendle talasani is one of the yummiest and simplest konkani recipe which is  good accomplishment for rice :)  It tastes really good if Tendle ( Gherkins ) are very tender!!!


      Ingredients :

      Small tender Tendle 20-25
      Crushed Garlic 10-12
      Broken Red Chillies - 4-5
      Asafoetida powder 2 tsp
      Oil
      Salt

      Method :

      Cut both the edges of tendle, crush it well with pestle & mortar, apply salt to crushed tendle and keep it aside for 15 minutes after 15 minutes pressure cook it for one whistle.

      In a kadai heat oil add crushed garlic fry it till its brown in colour now add broken red chillies and asafoetida powder now add tendle and little water cook it covered until done, its tastes good when its little burnt in colour.

      Beans Garlic Stir Fry




      Beans garlic stir fry or beans talasani is authentic konkani recipe in which crushed garlic is used for seasoning, this is yummy combo with rice and "Amchi Dalithoy"


      Ingredients : ( Serves 2 to 3 )

      Lengthwise chopped  beans 1 cup

      Seasoning:
        Oil
       Crushed garlic  7-8
       Broken red chillies 4-5

      Salt for taste

      Method :

      In kadai heat oil add crushed garlic fry it till its little brown in colour now add broken red chillies, chopped beans, salt and  water, cook it covered until done.


      Notes : It tastes great if beans is very tender !!!









       

      Mixed Vegetable Stir Fry



      No introduction needed for this recipe, just prepare this recipe when you want to clean your refrigerator :))))


      Ingredients: ( Serves 2 people )

      Mixed vegetable of your choice , have added

      Chopped capsicum 2
      Chopped tomatoes 1
      Chopped potatoes 1
      Corn kernels  1/2 cup

      Seasoning:

      Oil
      Musturd Seeds
      Red chilli powder 2 tsp or more
      Hing/ Asafoetida powder 1 tsp

      Salt
      Water for cooking

      Method :

       In a kadai heat oil season it with musturd when it splutters add asafoetida powder , & red chilli powder now add all the vegetables, salt and 1/4 to 1/2 cup water, cook it covered until done.

      Serve hot !!!

      Beans Potato Palya ( Beans Potato Stir Fry )


      Think no one needs introduction for this simple humble recipe :) Here is the recipe


      Ingredients :

      Tender beans chopped 2 cups
      Potato chopped in cubes 1/2 cup
      Red chillies 2
      Green Chilli 1
      Grated Coconut - generous amount
      Salt for taste

      Seasoning :

      Oil 2-3 tbsp.
      Mustard seeds 1/2 tsp
      Urdal 1/4 tsp

      Method :

      Heat oil in kadai add mustard seeds once it splutters add urdal and chillies, now add beans, potato, salt and water cook it covered until done finally add grated coconut and mix well.

      Serve hot with rice or roti !!!

      Alsande, Nelkadle Palya ( Long beans ground nut stir fry )




      Alsande with ground nut stir fry is common side dish in now days functions specially in Udupi Mangalore regions :) I tasted this recipe many a times in functions, but never thought of trying this :P Recently one of my FB friend posted this recipe and it tempted me to try this !!! Its simple and easy recipe goes really well with rasam or dal :)

      Ingredients :
      Alsande ( Long beans ) 1 cup chopped
      Ground nut 1/4  cup
      Grated Coconut generous amount
      Salt for taste

      Seasoning
      Oil
      Mustard Seeds
      Urdal
      Broken Red Chillies 2-3

      Method :
      Soak ground nuts in water for 10-20minutes, now keep kadai add oil once its hot add mustard seeds once its splutters add urdal and broken red chillies,  now add long beans and soaked ground nuts , salt and water cook it covered, once done add grated coconut and mix well!!!

      Enjoy this with rice and rasam/ dal !!!!

      Dudde Upkari ( Sweet Pumpkin Stir Fry )

      Dudde Upkari
       
      Dudde upakri is simple and healthy recipe which goes well with rice/ roti
       
      Ingredients: ( Following measurement serves 2 people)
       
      chopped dudde(  sweet pumpkin) 1 cup
      Red chillies 2-3 or according to your taste
      Musturd seeds 1/2 tsp
      Jeera 1/4 tsp
      Hing/ Asafoetida a generous pinch
      Jageery 2-3 tblsp
      Grated coconut 1/4 cup
      oil - Seasoning
      salt
       
      Method
       
      In a kadai heat oil when its hot add mustard seeds when it splutters add jeera, hing and red chillies, now add chopped dudde, salt, jaggery and water sufficient  for cooking, keep it covered until its cooked finally add grated coconut and mix well. !!!!
       
      Note : If pumpkin is tender ones no need to peel the skin or else remove the skin while chopping.
