Hinga Chutney ( Asafoetida Chutney )



Hinga chutney is famous " Konkani Recipe "  which is normally served with idli or dosa. Tastes great as it has aromatic flavor of roasted hing or asafoetida. Here goes the recipe.

Ingredients  

  • Fresh grated coconut 1/2 cup
  • Red chillies 4-5
  • Tamarind - small piece
  • Hing or Asafoetida -  methi seed size
  • Salt to taste.
For Tempering
  • Oil 1 tsp
  • Mustard seeds 1/4 tsp
  • Curry leaves - 1 spring.
Method :
  • Roast chillies in lil oil n keep it aside.
  • Same oil fry hing for few seconds, take care not to over roast it , as it made lead chutney bitter.
  • Now grind all the ingredients along wit roasted items into smooth paste.
  • Add water according to consistency you prefer.
  • Season it with seasoning items.
Serve with Idli or dosa :)

Bhenda Gojju ( Ladies Finger Salad )



Ingredients :

  • Small tender ladies finger 15
  • Oil 2-3 tsp
  • Salt to taste.
  • Curds 1/2 cup
For tempering :
  • Oil 2 tsp
  • Mustard 1 tsp
  • Urdal 1/2 tsp
  • Broken red chilies 1  
Method :
  • Wash & dry pat ladies finger, trim the edges, & chop them into pieces.
  • In kadai heat oil and fry ladies finger till its brown in colour & little crunchy switch off the flame.Add salt & mix well
  • Whisk the curd ,add little water, season it with seasoning items mix well & before serving add ladies finger& serve immediately :)
Serve as a side dish with rice

Karathe Chutney ( Bitter Gourd Chutney )




Ingredients  :

Bitter gourd 1 medium

For the masala :

Grated coconut 1/2 cup
Roasted red chillies 3-4 or as per your taste
Coriander seeds 1/2 tsp
Tamarind small piece

For Seasoning :

Oil 1 tbsp
Mustard seeds 1/2 tsp
Curry Leaves - few
Broken red chilli -1
Chopped onion -1

Method :

Chop bitter gourd into small pieces & soak it in salt water for 30 minutes. Squeeze out extra water & either deep  or shallow fry it, you can even microwave it  for 5- 10 mins by adding little oil.

Now grind masla item by adding little water into smooth paste.

In a kadai heat oil & season it with musturd, curry leaves & red chillies, now add chopped onions & fry till it becomes brown, add the ground masala and fry for few mins switch off the flame .

Finally add fried bittergourd pieces mix well & serve it with rice or roti .

Ambuli Chutney ( Raw Mango Chutney )



Yummy, tangy. spicy, lip smacking chutney which goes really well with rice & dal or even with idli, dosa etc. :) I just love this chutney with dal & rice. So here is the simple recipe of yummy chutney :)

Ingredients

Chopped raw mango pieces ( Preferably totapuri ) 1/4 cup

Grated coconut 1/2 cup

Green chillies 2-3 ( more if you prefer more spice )

Garlic pods 4

Salt to taste.

Method :

In lil oil fry 2 garlic, when  it becomes light brown add green chillies fry it for a minute.

Now grind roasted item along with grated coconut, mango pieces, 2 raw garlic pods & salt into fine paste.

 Enjoy it with rice, dosa or idli :)

Pineapple Gojju





Ingredients 
  • Chopped pineapple 1 cup
  • Grated coconut 1 cup
  • Red chilies 8-10
  • Coriander seeds 2 tbsp
  • Methi seeds 1/2 stp
  • Urdal 2 tbsp
  • Jaggery 1/4 cup
  • Salt for taste
Seasoning :
  • Oil
  • Mustard seeds
  • Curry leaves.
Method :

  • Cook pineapple along with jaggery in water.
  • Fry  coriander seeds, urdal, methi seeds & red chillies in little oil.
  • Grind fried items along with cup of grated coconut into smooth paste.
  • Add ground masla to cooked pineapple, add salt & boil it well.
  • Finally season it with seasoning item :)
Gojju is ready to relish :)

Tomato, Potato Gojju




Simple, Lip smacking yummy gojju, which goes really well with hot rice & dal :) Here is the recipe.

Ingredients :

  • Potatoes - 2 big or 3 small
  • Tomatoes -2 large
  • Green chillies 2-3
  • Salt 
  • Asafoetida - generous amount
For seasoning :
  • Oil- 2 tsp
  • Curry leaves - few
  • Mustard seeds 1 tsp
  • Urdal 1/2 tsp
  • Broken red chillies 2.
Method :
  • Pressure cook potatoes & tomatoes for 2 whistles ( Reserve boiled water )
  • Smash it well with smasher.
  • Crush green chillies in pestle & morter
  • Add chilies to smashed item, add little water to get gojju consistency.
  • Add salt, asafoetida mix well
  • Season it with seasoning item.
  • Garnish with coriander leaves.

Gojju is ready to serve :)

Coriander leaves & Roasted Gram Chutney



This chutney is good accomplishment for idli, dosa and chpathis, simple recipe with  little twist to normal coconut chutney. Here comes the recipe


Ingredients:
  • Grated coconut 2 fistful
  • 1 tsp roasted gram
  • Coriander leaves 1 fistful
  • Red chillies 2
  • Green chilli 1
  • Tamarind small piece
  • Salt to taste
Method :

Fry roasted gram and red chillies separately in spoon of oil.

Now grind roasted item along with other ingredients into smooth paste, that's it chutney is ready to serve!!!

Kothambari Palle Gojju ( Coriander Leaves Gojju )



A simple yummy Gojju which is good accomplishment with hot rice. This recipe requires limited ingredients!!


Ingredients :
  • Coriander leaves 1/2 bunch
  • Grated coconut 1/2 cup
  • Green chillies 2 ( more according to your taste )
  • Jaggey 2-3 tsp
  • Tamarind small piece
  • Salt for taste
Seasoning :
  • Oil 2 tsp
  • Musturd seeds 1 tsp
  • broken red chillies 2
Method :

Grind grated coconut, chillies, tamarind into smooth paste, now add coriander leaves and jaggery grind again, add salt, little water and finally season it with seasoning item !!

Gosale Gojju ( Ridgegourd Gojju)



Gosale Gojju (Ridgegourd Gojju ) is simple yummy recipe which goes well with hot rice, I got this recipe from my husband's aunt who is a great culinarian!! was surprised when I heard this recipe for first time :P!! When prepared for the first time just loved it, so here comes the recipe.


Ingredients :

 Gosale 1 ( Preferably tender ones )
Slit green chilli  2
Grated coconut 2 tbsp
Salt for taste
Asafoetida/ hing water
Coconut oil
Chopped corriander leaves for garnishing

Method  :
 
Chop gosale into pieces, in a vessel cook gosale with little water along with chillies and grated coconut, once gosale is cooked allow it to cool completely, now just grind cooled mixture for a single pulse in mixy, add salt, hing water mix well, finally add coconut oil and garnish with corriander leaves!!

Batate Gojju ( Potato Gojju)



 Potatoes need no introduction, its  the one vegetable which everybody will have in their home anytime :)This is the simplest "amchi recipe" which can be prepared within short period of time if you have potatoes in your vegetable basket :)) Here is the recipe


Ingredients :
Boiled  and peeled potatoes 3
Green Chilies 2 or more if you want it to be more spicy
Tamarind small marble size
Salt for tatse
Hing/asafoetida water generous amount

Seasoning :
Oil
Mustard Seeds
Jeera
Red Chilies 2
Curry leaves few leaves

Garnishing:
Chopped Corriander leaves

Method :

Pressure cook the potatoes in pressure cook for 3 whistles, ( keep the boiled water )peel and smash the potatoes well once its cools down completely.

In a mixy  jar grind green chillies,tamarind & salt  with little water till it crushes well, now add this to smashed potatoes and add water ( boiled water) generous amount of hing water mix well, season with seasoning items and garnish with Corriander leaves :)!!!!

Relish this with hot rice and dal :)!!!!
