Ingredients :
- 1 1/2 cup bastmati rice.
- 1 large onion thinly sliced
- 1 large or 2-3 small carrots
- Cashews 6-7
- Cloves -2
- Cardamom -2
- Red chilli powder 1 tsp
- Garam masala 1/2 tsp
- Ghee 3-4 tsp
- Salt to taste.
For the masala :
- Coriander leaves 8-10 springs
- Mint leaves 5-6
- Green chilles 5-6
- Garlic cloves 5
- Ginger 1 inch piece
- Grated coconut 2 tbsp ( Optional)
Method :
- Soak rice in water for 20 minutes.
- Make smooth paste of masla items by adding little water.
- In a pressure cooker add ghee, when its hot add onions, fry till its pinkish.
- Now add cloves cardamom & cashews, fry till cashews turn golden brown.
- Add ground paste, fry it for a minute or so
- Now add chopped carrots& mix it.
- Add garam masala & red chilli powder mix it.
- Add rice, salt & lil less than 3 cups of water & pressure cook it for 3 whistles.
- Allow the pressure to cool down.
- Fluff it with fork once its done.
Serve with raita or any other north Indian curries.
