Carrot Pulav



Special thanks to Mitha Arun Hegde & her mom for this super easy, delicious recipe. 

Ingredients :

  • 1 1/2 cup bastmati rice.
  • 1 large onion thinly sliced
  • 1 large or 2-3 small carrots
  • Cashews 6-7
  • Cloves -2
  • Cardamom -2
  • Red chilli powder 1 tsp
  • Garam masala 1/2 tsp
  • Ghee 3-4 tsp
  • Salt to taste.
For the masala :
  • Coriander leaves 8-10 springs
  • Mint leaves 5-6
  • Green chilles 5-6
  • Garlic cloves 5
  • Ginger 1 inch piece
  • Grated coconut 2 tbsp ( Optional) 
Method :
  • Soak rice in water for 20 minutes.
  • Make smooth paste of masla items by adding little water.
  • In a pressure cooker add ghee, when its hot add onions, fry till its pinkish.
  • Now add cloves cardamom & cashews, fry till cashews turn golden brown.
  • Add ground paste, fry it for a minute or so
  • Now add chopped carrots& mix it.
  • Add garam masala & red chilli powder mix it.
  • Add rice, salt  & lil less than 3 cups of water & pressure cook it for 3 whistles.
  • Allow the pressure to cool down.
  • Fluff it with fork once its done.
Serve with raita or any other north Indian curries.
